Cherry Coconut Bars
Served at the TruHealth Pamper Days
Heat oven to 350 degrees
1 cup white spelt flour
1/2 cup organic butter or shortening
3 tablespoons powdered xylitol (powder it in the blender or food processor)
Mix these in a mixer, and spread out/press into a greased baking pan 9x9x2 - I use the Grapeseed oil spray by Spectrum that we sell
Bake this for 10 minutes.
While that is cooking, mix:
2 eggs
1/2 cup xylitol
1/4 cup light Agave nectar
1 tsp vanilla
1/4 cup spelt flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup nuts
1/2 cup organic flaked coconut
1/2 cup chopped organic cherries, drained (I used some that I had freezed, but canned would work also)
Spread over the baked layer, and bake until golden brown 25 to 30 minutes.
Cut into 2x1 inch bars.
