Cinnamon Toffee Triangles

Heat oven to 275 degrees

1 cup Sucanat or raw sugar or (1/2 cup xylitol and 1/2 cup Dark Agave Nectar)

1 cup organic butter or organic shortening or coconut oil

1 egg yolk (save egg white)

1 tsp vanilla

2 cups white spelt flour

1/4 tsp sea salt

1 tsp organic ground cinnamon

Mix all ingredients in a mixing bowl, wet ingredients first, then dry ingredients.

Spread out the mixture in a 12x12x2 or use jelly roll pan

Brush the dough with the unbeaten egg whites.

Sprinkle with walnuts or other nuts - or you could sprinkle with coconut or other favorite topping

Bake for 1 hour.

Be sure to cut while warm or will get hard fast and you won't be able to cut.

Cut into 2 1/2 inch squares, then cut each square diagonally into halves.  Cool and enjoy!
