Healthly Lasagna
1 lb organic grass fed ground beef or turkey - you can add more if you like it really meaty and you can mix the two also
1 -2 jars of your favorite pasta sauce (we use organic sauce without sugar, and all the fillers)
1 tub of Soyco cream cheese - I use this instead of the Ricotta - has same texture and taste without the dairy or calories.
1 package or rice or spelt lasagna noodles
1 lb of almond, soy, rice or other healthy cheeses - you can mix the flavors if you want - put chedder and mozzarella
1 small can of Soyco Rice Parmesan cheese
optional -but much a much healthier option - 1 large or 3-4 small zucchini - cut into noodle shape (long strips) and par-boiled. You can use these instead of noodles or in addition to if you are short on noodles
Brown the ground meat in a pan, then drain any excess oils
Cook the noodles in boiling water as instructed on package - or you can often just put them in the pan without cooking - check the brand you have
Grate the cheese, unless you have purchased the already grated kind which is the easiest
In 1 large 9x13 baking dish
Spoon out some pasta sauce and spread all over the bottom of the pan
Then lay down the noodles/zuccini, one by one till the pan is covered on that layer
then sprinkles some meat over the noodles
then spoon out small dabs of cream cheese and place around randomly
then sprinkle some cheeses on - whichever kind you want, then sprinkle the Rice Parmesan cheese also
repeat process till all out of noodles/zuccini
make sure top layer has noodles, sauce then more cheese and top with Rice Parmasen cheese
Bake in a hot oven 375 to 400 degrees 30-40 minutes
It should be bubbling when done
Cover if necessary to prevent from burning edges
This is also great to make ahead of time for freezer or fridge and then bake later. In fact, the more time the flavors get to meld together, the better it is!
