Healthy Nachos
1 package of Ezekial Tortillas
1 package/lb of favorite meat or meat substitute
1 pkg of your favorite taco/Mexican seasoning
– try to find one at the health food store without sugar, MSG and other harmful ingredients.
1 can of favorite beans - I prefer black beans
I package of favorite cheese, soy, rice, almond, etc - grated
1 can/jar of your favorite salsa, jalapeño peppers or chili's - whatever you like
You can also add onions, chopped tomatoes, cilantro, rice/soy sour cream, lettuce, etc. –whatever your taste buds desire
Open the package of the tortillas and cut the tortillas into triangles with sharp knife or pizza cutter - I typically get 8 triangles out of 1 tortilla - depends on how wide you make the triangles.
Put the cut tortillas onto a cookie sheet or pan and broil or bake at 250 degrees for 10-20 minutes depending on how brown/crisp you like them
While they are browning, cook/brown the meat in a pan, drain any excess oil and add the taco/Mexican seasoning per the package instructions (add water and/or reheat if necessary) – if you are using tofu chop up the tofu into small chunks and saute with an oil then add the taco seasoning.
While that is cooking grate the cheese and open the packages/containers of the other ingredients.
When the meat and tortillas are done, arrange the tortilla chips into a large 9x13 pan.
Then put the meat all over the chips, then add the beans (you can heat them first if you want, but I don’t), then put on the cheese over the whole thing and put back in the oven and bake at 250 degrees for 10-15 minutes depending on how brown you want it.
Then you can either dollop on the sour cream, and other toppings, jalapeño’s, etc. or put them on the side for people to dip their nacho's into.
