Homemade Tootsie Rollups - Gluten Free
Make only 1 batch at a time in the food processor - it is VERY thick and makes it almost impossible to work with if it is more than one batch at a time.
1 cup raw cocoa powder - you can use any cocoa powder unless you are going for totally raw, carob powder could also be used
1/2 cup mesquite powder - this is what gives it the unique flavor - mesquite flour is very good for blood sugar issues
1/2 cup almond butter - any nut butter will work - one of my customers used cashew/macadamia - use what you have :-)
3/4 cup honey or agave nectar - (original recipe calls for a mix of both) - see what you like!
2 T. Fo-Ti - I didn't use this, and neither did the person I got this from, but it is on the original recipe
2 heaping Tablespoons of lucuma powder - this gives it a nice texture and sweetness -but not too sweet
1 Tbsp vanilla
1 pinch of sea salt
Process in food processor till well blended - it is very stiff - stir down as needed and place into bowl and knead in more lucuma
(several Tbsp.) till no longer sticky - roll in logs and wrap in wax/parchment paper - store in freezer or fridge
